I like, totally ate like crap this weekend.
It's true! I also went to the farmers' market, so I have tons of fresh veggies that I'll be cooking this week to offset the beer and tailgate food I consumed this weekend!
This is one of my favorite ways to prepare veggies as a side dish - by roasting them, their flavor intensifies and you don't need to add any fat or cheese (not that I have any problems with that) to have something really delicious!
Roasted Broccoli with Garlic
This recipe is so simple and requires no measurements, thank goodness! You could use any hardy vegetable such as carrots, eggplant, asparagus, or mushrooms in this dish too!
- Broccoli
- Garlic (about 1 clove per serving)
- Salt
- Pepper
- Fresh Herbs (I used basil because it's what I had, but use whatever you have, or nothing at all!)
- Lemon






I love broccoli, since its so healthy though, i usually get a kick out of tempura frying it!
